菜籽油精炼热处理对紫外光谱的影响

摘要考察各阶段精炼热处理对菜籽油紫外光谱的影响,为油脂精炼危害物的形成风险探索快速评估方案。,分别用以表征油中二元和三元共轭结构的多寡,进而评估精炼危害物的形成风险。结果表明,脱胶、脱酸、脱色操作热处理均可导致油中二元和三元共轭结构缓慢累积;而在脱臭操作中,油中二元和三元共轭结构的累积速率分别可达之前三个操作的11倍和33倍以上。二元和三元共轭结构的累积与精炼热处理程度及异构、聚合产物生成具有密切关联,因此D245和R272两个参数可用作精炼危害物的快速定量评估指标。

Abstract To achieve efficient risk assessment of hazardous substances formation during oil refining process, the effects of heat treatment on ultraviolet (UV) spectra of Rapeseed Oil (RO) were investigated. A thin-film sample chamber with optical lenghth of was used to collect UV spectra of refined RO samples and parameters of D245 and R272 were selected to characterize the accumulation of di- and tri- conjugated products in RO respectively, thus to evalutate the risk of hazardous substances formation.
