Standard:
All service associates will be able to prepare hot beverage for guest consumption following the proper procedure.
标准:
酒吧员必须根据标准程序制作热饮,制作出的热饮必须是符合客人的要求。
Procedures:
Hot Beverages, .: Irish coffee, speciality coffee and tea and flaming cocktails.
Preparation of speciality coffee, using:
- Traditional burner
- Coffee machine
- Proper glass/cup
Traditional Burner
First, prepare burner with flaming chemicals for flaming.
Prepare Irish coffee glass with sugar and liquor. Sugar must be in crystal form and not fine sugar.
Place Irish coffee glass with the liquor and sugar onto the stand burner.
Light the burner with a match.
While the flame is alight, rotate the glass slowly, by twirling the glass over the flame. Otherwise the glass may crack due to the heat.
Prepare the coffee, which must be freshly brewed and very hot.
Prepare whipped cream.
When all the sugar pletely melted, remove glass from stand burner.
Warm the glass in this fashion and set the liquor on flame.
Right away, pour hot coffee into the glass and leave 2cm from the rim.
Then top up the coffee with whipped cream using a teaspoon.
Do not flame the liquor when the glass is facing towards your body.
Immediately serve the liquor coffee to the guest.
Do not put too much cream; or is enough.
Straight Into Glass
First prepare glassware and add only sugar crystals.
Add ½ glass
