目录 内容摘要 1 关键词 1 Abstract 1 Key words 1 引言 2 2 3 3 研究方案 4 4 4 7 讨论与结论 9 9 9 10 11 11 参考文献 12 致谢 13 内容摘要:本研究以马铃薯、紫薯、白薯为材料,进行了可溶性糖含量、维生素 C含量的测定,分析这三种薯类的两种主要营养物质一可溶性糖、维生素 C含量的差 异。结果表明:不同薯类的可溶性糖、维生素 C含量有明显的差异。可溶性糖、维生 素C含量最高的薯类为白薯,含量较高的薯类为紫薯,含量最低的薯类为马铃薯。本 研究对人们的合理膳食、饮食健康、医疗保健都具有十分重要的意义 ,同时为薯类食 品的开发与加工提供一定的理论基础。 关键词:薯类含量总糖维生素C测定 Abstract : In this study, potato, purple sweet potato and sweet potato were used as materials to determinate their soluble sugar and vitamin C contents, the differences of soluble sugar ,vitamin C contents in these three kinds of potato were results showed that there were obvious differences in the soluble sugar vitamin C contents in different potato Sweet potato has highest contents of soluble sugar and vitamin C, purple sweet potato has higher contents of them and sweet potato has lowest contents of them. The study on people's reas on able diet healthy diet medical care are of great importa nt significance simultaneously it provides the theoretical foundation for the developme nt and process ing of potato food.
