2 急宰猪处理
，在检验过程中发现难以确诊的病猪时，要及时向检验负责人汇报并进行会诊。
死猪不得冷宰食用，要直接送往不可食用肉处理间进行处理。
5 宰后检验及处理
宰后检验必须对每头猪进行头部检验、体表检验、内脏检验、胴体检验、复验与盖章。
无同步检验设备的屠宰厂或场屠体的统一编号，按GB/T17236执行。
头部检验
屠体经脱毛吊上滑轨后进行，首先观察头颈部有无脓肿，然后切开两侧颌下淋巴结，检查有无肿大
