摘要
设计日处理能力50吨,可生产搅拌型酸奶及酸乳饮料等品种。收奶计量采用电子磅秤与磅秤相结合,储奶为3台32吨室外奶仓配合,采用倒罐方式进行净乳操作。调配至暂存之间的设备串联相结合,具有很大的灵活性。配料系统配置高速混合罐用于化糖、化胶和溶酸等。车间采用两台多用途自动板式杀菌机,可进行预巴杀(65℃-15S)、巴氏奶(85℃-15S)、酸奶(95℃-300S)和两台管式热交换器可生产乳饮料(125℃-2S、用于利乐包装系统)的杀菌。相对无菌产品,可用作巴式预杀菌。生产乳酸奶时,发酵奶与调配杀菌后的糖胶水在水合罐中混合。按本方案配置,该生产线同时可生产二至四个不同品种规格的产品。讲述了一个日处理奶量50吨乳品厂主车间平面图及项目工艺方案的设计原则、方法、程序等等。
对于酸奶及酸乳饮料生产车间,一般采用2班工作制,每天工作时间16小时,除去清洗时间2小时,实际工作时间按14小时计算,本设计描述了一个日处理鲜奶50吨的酸乳及酸乳饮料主车间平面图及项目工艺方案的设计原则、方法、程序、设备、耗水、耗气、耗电、清洗等等。

Abstract
The design date handling ability 50 tons, may produce varieties and so on agitation yogurt and yogurt drink. Receives the milk to measure to use the electronic platform scale and the platform scale unifies, Chu Naiwei five 10 ton outdoor storage tanks with two 20 ton outdoor milk warehouse coordination, select the tank switching method to carry on the breast to operate only. Mixes the equipment series unifies to the interim, has the very big flexibility. The ingredient system disposes a high speed blending tank to use in melting the sugar, melting the rubber and to dissolve the acid and so on, if mixes the work load to be big, may dispose two sets of above equipment, forms system which two sets oppose. The workshop uses two multipurpose automatic board style sterilization machines, may carry on the Palestinian type milk (85 ℃-15S), the yogurt (95℃-300S) and two steady pipe type heat interchanger may produce the young drink (125℃-2S, uses in advantage happy packing system
