牡丹油微胶囊化技术研究李辉 1,李超 2,周燕燕 1,李敬龙 1*(, 山东济南250000;,山东济南 250000)摘要[目的]探讨牡丹油微胶囊化技术。[方法]利用β鄄环糊精、阿拉伯胶和大豆蛋白作为壁材采用喷雾干燥技术制备牡丹油的工艺,对牡丹油微胶囊的制备工艺参数进行了单因素和正交实验分析。[结果]得到制备牡丹油微胶囊的最优工艺参数∶壁材β-环糊精∶阿拉伯胶∶大豆蛋白的配比 3∶1∶2,固形物含量 35%,芯壁材配比 3∶1,乳化剂添加量 %。在此条件下,牡丹油包埋率达到 92%。[结论]在此工艺下牡丹油的包埋率高,为牡丹油的进一步开发打下了基础。关键词牡丹油;微胶囊;包埋率作者简介李辉(1989- ),男,山东菏泽人,硕士研究生, 从事新资源开发,E鄄mail:yyjjhhdd@。* 通讯作者,教授,从事现代酿酒技术研究,E鄄mail:******@spu.。收稿日期 2014鄄02鄄26修回日期 2014鄄03鄄18Microencapsulation of Peony OilHui LI1, Chao LI2, Yanyan ZHOU1, Jinglong LI1鄢1.
