番茄红素的最佳应用研究

摘要:番茄红素作为一种天然无毒的食品添加剂,其高效的抗氧化能力、呈色作用以及生理效应等诸多优点,受到人们的广泛关注。但番茄红素中含有大量的不饱和结构,使其对环境因素非常敏感,容易发生降解和异构化,使其溶解能力、呈色能力以及生物活性发生大幅度改变,所以对其各种最佳应用条件成了人们研究的热点。本文通过了解番茄红素功效与应用,介绍了其最佳原料来源-西瓜,人体里用的最佳生理效应,目前最佳的萃取方法—有机溶剂萃取法,和最佳的保存状态与方法。

Abstract :Lycopene as a natural non-toxic food additive, its highly efficient antioxidant, coloring effects, and physiological effects, and many other advantages, by the people's attention. But contains large amounts of lycopene in the unsaturated structure, it is very sensitive to environmental factors, prone to degradation and isomerization to solvency, coloring ability and biological activity of a significant change occurred, so most of its various best application conditions e a research focus. 番茄红素是植物中所含的一种天然色素,具有极强的抗氧化作用,是迄今为止自然界中被发现的最强抗氧化剂之一。主要存在于番茄、西瓜、柿子、南瓜以及葡萄柚等作物的成熟果实中。它是目前自然界中被发现的最强抗氧化剂。科学证明,人体内的单线态氧和氧自由基是侵害人体自身免疫系统的罪魁祸首。番茄红素清除自由基的功效远胜于其他类胡萝卜素和维生素E,其淬灭单线态氧速率常数是胡萝卜素的2倍以上,是维生素E的100倍。
