摘    要:
莲藕作为传统的药食两用食物, 具有丰富的营养价值与独特的保健功能。中国莲藕资源丰富、种类繁多, 产业发展前景广阔。阐述了莲藕的营养功能, 从莲藕的生产、加工、科研与消费等方面分析了中国莲藕产业现状, 预测了产业发展趋势, 并基于分析中国莲藕产业存在的主要问题, 从推广莲藕种植新模式、加快特色生态农业经济发展、发展现代化莲藕加工技术、完善产业支持政策、科学引导莲藕消费等方面提出产业发展思路。
