摘要
钵钵鸡鲜香麻辣,口味独特,营养丰富,是四川的传统名小吃。但因其一直保持小作坊式的分散小规模生产,钵钵鸡难以走出店铺而广泛流传。
为充分满足消费者对这一传统美食垂涎已久的钟情,以及进一步推广钵钵鸡所代表的川渝饮食文化,本研究项目致力于评估工业化生产钵钵鸡的技术可能性,并通过机械选型和设计、单因素和正交实验、HACCP、以及理化、感官、微生物指标检验等方法探寻工业化生产袋装即食签串钵钵鸡的恰当方案,为其工业化实现奠定基础。

Abstract
Benben Chicken enjoys a high popularity for its delectably spicy taste and appetizingly hot flavor, a full-blown aroma, along with its rich nutrients. It is highly spoken of as a most well-known refreshment in Sichuan Province. However,Benben Chicken has hardly spread to places beyond Sichuan Province, due to the fact that Benben Chicken has mostly been produced and sold by scattered private-operated workshops and has few chances to break through the boundary of these private-owned shops.
