main products are53% ( v/v ) of Maotai flavor style liquor. Th e focus of the design of workshop is liquor.
This design is chosen in the ZunYiXian sesame town site goddess temple, this are a is low altitude, is rich in water resource, and water quality is very good, never had a ny pollution, and the temperature is high, average temperature, 21 ℃, the tallest temp erature 38 ℃, the lowest 4 ℃. Average annual 71% relative humidity, the average ann ual rainfall of 1000 mm or so. I personally think the special geographical position is v ery helpful in the brewing maotai-flavor liquor of microbial habitat and reproduction.
The whole craft was accordance with Maotai flavour liquor craft. Pure wheat w as used to make Daqu in this design. the Daqu making emphasized raw material using, natural vaccination and aging Daqu. The craft characteristics inclued four high an d ong long . There were high temperature Daqu making, high temperature piling up, high temperature fermentation, high temperature distillery and long-storaging period. One year production cycle, through throwing material two times, the distillation nine times, adding the Daqu eight times, eight times fermentation, seven times pluck liquo r. After stroaging three years , different kinds of middle-product were mostly decreas ed and the pakaging material was china with 500ml volum. Whole production technol ogy accord with the demands for cleaner production, three wastes punish and up to n ational relevant standards, it do not have many influence on the local natural ecologic al environment.

中国的白酒有五千年以上的悠久历史。在漫长的发展过程中,形成了独特 的风格。白酒是以曲类、酒母为糖化发酵剂,利用淀粉质(糖质)原料,经蒸煮、 糖化、发酵、蒸馏、陈酿和勾兑而酿制而成的各类白酒。其酒液无色透明,故称 为白酒。白酒芳香浓郁,醇和软润,风味多样。因主要采用烧(蒸)工序,亦称 烧酒。因含酒精量较高,所以有些地方直呼其为烈性酒或高度酒。我国的白酒, 历史悠久,在世界上独树一帜。
