三聚氰胺分析检测方法的研究进展

摘要:介绍了三聚氰胺的物理和化学性质、用途,及其作为食品添加剂对人体健康的危害;重点总结了三聚氰
胺现有的各种检测方法;并就各种检测方法的优劣进行了比较. 指出三聚氰胺是一种工业原料,而在食品中添
加三聚氰胺会危害人们的身体健康,甚至致人死亡;正因为如此“, 三鹿奶粉事件”的发生为社会敲响了警钟,引
起了人们对三聚氰胺及其衍生物的普遍关注.

Abstract :A review is p rovided about t he physical and chemical properties and use of melamine ,
as well as it s hazard as a food additive to human healt h. Currently available met hods for analy
zing and testing melamine are summed up pared with respect to t heir advantages and
disadvantages. It is pointed out t hat as one of industrial raw materials , melamine added into
food as an additive is hazardous to people’s health and can even cause deat h. This is why “San
lu milk powder incident" ringed t he alarm to our society and aroused great concern about mela
mine and it s derivatives.

三聚氰胺(melamine) 简称三胺,学名三氨三嗪,别名蜜胺、氰尿酰胺、三聚酰胺,是一种重要的氮杂环有
机化工原料,为纯白色单斜晶体,分子式为 C3 N6 H6 ,结构式如图 1 所示.
